Learn With Us

Reclaim the skills your grandparents knew. Workshops, seminars, and online courses grounded in heritage wisdom and regenerative practice.

Two Pathways of Learning

Our learning programmes are divided into two complementary streams: Heritage Skills — the practical, hands-on crafts and food skills that connect us to the land — and Foundational Philosophy — the deeper understanding of regenerative systems, natural health, and sustainable living.

Heritage Skills

High-labour, low-skill activities that reconnect us with the materials and processes that sustained previous generations. These are not hobbies — they are essential knowledge.

🧶

Wet Felting

Learn the ancient art of transforming raw Saxon merino wool into beautiful, durable textiles using only water and friction.

🪡

Knitting & Fibre Arts

From raw fleece to finished garment — understanding natural fibre, spinning, and the meditative practice of knitting.

🥩

Ethical Butchery

Whole-animal butchery with respect and skill. Know your food from paddock to plate.

🍞

Sourdough & Bread Making

The original slow food. Learn to cultivate a starter, understand fermentation, and bake nutritious bread from scratch.

🫙

Preserving & Fermenting

Lacto-fermentation, pickling, and preserving seasonal abundance. Probiotics, gut health, and the wisdom of the pantry.

🐄

Tanning & Leather Work

Traditional skin tanning using natural methods. Turn pest control by-products into beautiful, lasting materials.

🌿

Medicinal Herbs

Identify, grow, harvest, and use medicinal plants. Antibiotic-resistant microbes are a growing threat — herbs work.

Cheese & Dairy

Making cheese and yoghurt from A2 milk, fermented with bacteria capable of producing vitamin K2.

Foundational Philosophy

Understanding the principles behind regenerative living. These seminars give you the intellectual and practical framework to make lasting change.

🌱

Regenerative Agriculture Foundations

Understanding soil biology, holistic grazing, and how to restore land health through intelligent management.

🏡

Permaculture Design Principles

Designing productive, self-sustaining systems that work with nature's patterns rather than against them.

🍯

Natural Beekeeping

Honeydew honey, propolis, beeswax, and the vital role of bees in ecosystem health. Commercial and hobbyist approaches.

💊

Poison-Free Living

Practical steps to remove chemicals from your food, home, and land. The case for a toxin-free New Zealand.

Sourdough & Bread Making
Heritage Skills

Sourdough & Bread Making

Learn to cultivate a sourdough starter from scratch, understand the science of fermentation, and bake a nutritious, long-fermented loaf. We cover flour selection, hydration, shaping, and the meditative rhythm of bread-making. You will leave with your own active starter and a loaf you baked yourself. This is the original slow food — and it is one of the most important skills you can reclaim.

Wet Felting Fundamentals

Transform raw Saxon merino fleece into a beautiful, durable textile using only water, soap, and friction. No needles, no machines — just the ancient process of agitation and heat. We cover fibre preparation, layout, wet felting technique, and finishing. You will leave with a completed felt piece and the knowledge to continue at home. Our naturally coloured merino is lighter and warmer than cashmere — it is a joy to work with.

Natural Skin Tanning
Heritage Skills

Natural Skin Tanning

Traditional skin tanning using plant tannins and natural methods — no chemicals, no shortcuts. We cover the full process from raw hide to finished leather, using possum and deer skins sourced from pest control operations. This is a high-value skill that turns a pest control by-product into a beautiful, lasting material. Pest control skins are a valuable resource; our furniture is a source of indoor pollution — natural leather is not.
